verderblichen Lebensmitteltropfen, n\u00e4mlich Milch, die spontan sauer wird und gerinnt.<\/p>\n<p>Die Rennetierung beginnt mit der Gerinnung von Kasein und Molkenproteinen. Kasein kann in Gegenwart von S\u00e4uren bis zu<strong>pH = 4,6<\/strong>, dem isoelektrischen Punkt von Kasein, koagulieren. Molkeproteine koagulieren bei einer\u00a0<strong>Temperatur von 90 bis 95 \u00b0 C<\/strong>\u00a0\/ 10-20 min.<\/p>\n<p>W\u00e4hrend des Herstellungsprozesses von K\u00e4se (Auswahl und Lagerung der Milch, Milchstandardisierung, Milchhomogenisierung, W\u00e4rmebehandlung der Milch, K\u00e4sebruch und K\u00e4sereifung) sollte auf den\u00a0<strong>pH-Wert<\/strong>\u00a0und die\u00a0<strong>Temperatur<\/strong>\u00a0des Produkts und der R\u00e4umlichkeiten, in denen die Herstellung stattfindet, geachtet werden.<\/p>\n<p>Bei der\u00a0<strong>Reifung von K\u00e4se<\/strong>\u00a0sollten Sie auf die Temperatur achten, da weichere K\u00e4sesorten bei niedrigeren\u00a0<strong>Temperaturen<\/strong>\u00a0und k\u00fcrzer reifen, w\u00e4hrend h\u00e4rtere K\u00e4sesorten bei h\u00f6heren Temperaturen und l\u00e4nger reifen.<\/p>\n<p>Bei der\u00a0<strong>Reifung von K\u00e4sen<\/strong>\u00a0mit\u00a0<strong>Edelschimmel<\/strong>sollte u.a.\u00a0<strong>eine Temperatur von 10-14 \u00b0 C<\/strong>\u00a0und eine\u00a0<strong>relative Luftfeuchtigkeit von 85-90%<\/strong>gew\u00e4hrleistet sein.<\/p>\n<p>F\u00fcr die\u00a0<strong>Reifung von K\u00e4sen<\/strong>\u00a0mit\u00a0<strong>Blauschimmel<\/strong>\u00a0sollte neben anderen Bedingungen eine\u00a0<strong>Temperatur von 10-13 \u00b0 C<\/strong>\u00a0bei einer\u00a0<strong>relativen Luftfeuchtigkeit von 90-95%\u00a0<\/strong>vorgesehen werden.<\/p>\n<p>Die Milchproduktion ist eine sehr komplexe Technologie mit vielen kritischen Punkten, die streng kontrolliert werden m\u00fcssen.
