Nat\u00fcrliche S\u00e4uren haben den frischesten, reinsten sauren Geschmack. Unter den Weintrauben sind dies Weinstein-, \u00c4pfel- und Zitronens\u00e4ure. <strong>Weins\u00e4ure<\/strong> ist die Haupts\u00e4ure in Trauben und ist die Komponente, die einen knackigen Geschmack und eine anmutige Alterung im Wein f\u00f6rdert. Ein m\u00e4\u00dfiger S\u00e4uregehalt in Weinen stammt von der<strong>\u00c4pfels\u00e4ure<\/strong>, die einen fruhtigen Geschmack verleiht. Eine kleine Menge stammt aus <strong>Zitronens\u00e4ure.<\/strong> Wein enth\u00e4lt auch Spuren von anderen S\u00e4uren. Die am wenigsten erw\u00fcnschte S\u00e4ure im Wein ist Essigs\u00e4ure, die, wenn sie in mehr als einer nominellen Menge vorhanden ist, dem Wein einen sauren oder essig\u00e4hnlichen Aspekt verleiht.<\/p>\n<p>Zuk\u00fcnftige \u00dcberlegungen k\u00f6nnten durchaus von der Erkenntnis gepr\u00e4gt sein, dass Weinstein den <em>sch\u00e4rfsten<\/em> Geschmack, \u00c4pfel den <em>ausgepr\u00e4gtesten<\/em>, Zitrusfr\u00fcchte den <em>frischesten<\/em>, Milchs\u00e4ure den <em>schw\u00e4chsten<\/em>, Essig den <em>bittersten<\/em>und <em>geruchvollsten<\/em> und Bernstein den <em>salzigsten<\/em> Geschmack hervorbringt.<\/p>\n<p>Der Gesamts\u00e4uregehalt in Weinen, auch <strong>titrierbare S\u00e4ure<\/strong> genannt, ist die Summe der festen und fl\u00fcchtigen S\u00e4uren. Der Gesamts\u00e4uregehalt wirkt sich direkt auf die Farbe und den Geschmack des Weins aus und wird, je nach Stil des Weins, in einem perfekten Gleichgewicht mit der s\u00fc\u00dfen und bitteren Empfindung der anderen Komponenten angestrebt. Die richtige S\u00e4ure in den Weinen macht sie erfrischend und zu einem idealen Begeliter f\u00fcr vorz\u00fcgliche Mahlzeiten. Zum Beispiel wird TA von 0,80% zu 8 g\/L.
