Diese Kulturen lassen die Milch g\u00e4ren und produzieren Milchs\u00e4ure aus dem nat\u00fcrlichen Zucker. Dieser G\u00e4rungsprozess f\u00fchrt zu einem Absinken des pH-Wertes und erlaubt so die Entfaltung der Aromen.<\/p>\n<p>Anschlie\u00dfend wird die Milch mittels Lab in feste und fl\u00fcssige Bestandteile zerlegt. Lab ist ein Enzymkomplex, der f\u00fcr die Gerinnung der Proteine in der Milch verantwortlich ist. Die resultierende feste Komponente ist als K\u00e4sebruch bekannt, und die fl\u00fcssige Komponente wird Molke genannt.<\/p>\n<p>Sobald die Milch geronnen ist, wird der K\u00e4sebruch fermentiert, bis ein pH-Wert von 6,4 erreicht ist. Der K\u00e4sebruch wird anschlie\u00dfend von der Molke getrennt, zerschnitten und geschichtet, um mehr Fl\u00fcssigkeit auszutreiben.<\/p>\n<p>Die Fermentation wird fortgesetzt, bis der pH-Wert 5,1 bis 5,5 erreicht, dann wird der K\u00e4se gesalzen oder in Salzlake eingelegt.
