W\u00e4hrend des Reifungsprozesses laufen im Wein viele Prozesse ab: Oxidation und Reduktion, Verringerung des S\u00e4uregehalts, Bildung von Weinstein und biologischer S\u00e4ureabbau. Um die Bildung unerw\u00fcnschter chemischer Formen zu verhindern, wird dem Wein Schwefeldioxid zugesetzt. Schwefeldioxid wirkt als Reduktions-, Stabilisierungs- und Konservierungsmittel.
