Es tr\u00e4gt zum Aufbau und zur Erhaltung starker Knochen und Z\u00e4hne bei, ist aber auch f\u00fcr andere k\u00f6rperliche Funktionen wie die Muskelkontrolle und den Blutkreislauf sehr wichtig. Milch und Milchprodukte sind eine der h\u00e4ufigsten nat\u00fcrlichen Kalziumquellen. Kuhmilch hat eine gute Bioverf\u00fcgbarkeit von Kalzium, sie liegt bei 30 bis 35 %. Bei dieser Methode wird ein sehr gro\u00dfes Molek\u00fcl namens EDTA verwendet, das mit Kalziumionen einen Komplex bildet. EDTA steht f\u00fcr Ethylendiamintetraessigs\u00e4ure. Als Indikator wird ein blauer Farbstoff, der sogenannte Patton- und Reeder-Indikator (PR), verwendet. Dieser blaue Farbstoff bildet ebenfalls einen Komplex mit den Kalziumionen und \u00e4ndert dabei seine Farbe von blau zu rosa\/rot, aber der Farbstoff-Metallionen-Komplex ist weniger stabil als der EDTA-Metallionen-Komplex. Wenn der Calciumionen-PR-Komplex mit EDTA titriert wird, reagieren die Ca2+-Ionen und bilden einen st\u00e4rkeren Komplex mit
