g\u00e4ren. Mit dem Wachstum des LABs w\u00e4hrend der G\u00e4rung <strong>sinkt der pH-Wert<\/strong> mit der anschlie\u00dfenden Hydrolyse von St\u00e4rke und Eiwei\u00df, was das Wachstum von Hefen beg\u00fcnstigt. Die Temperatur beeinflusst die <strong>Fermentationsgeschwindigkeit<\/strong> und die <strong>mikrobielle Zusammensetzung<\/strong> des Sauerteigs.<\/p>\n<p>Sauerteig des <strong>Typs I<\/strong> wird in der Regel mit einem festen Teig und nach einem traditionellen Verfahren hergestellt, das durch eine spontane G\u00e4rung gekennzeichnet ist, die durch die bereits im ersten Teig vorhandenen Mikrobenst\u00e4mme ausgel\u00f6st wird und bei Raumtemperatur (20-30 \u00b0C) erfolgt.<\/p>\n<p>Durch die Zugabe von Starterkulturen wird der Fermentationsprozess bei
