Les acides naturels ont les go\u00fbts les plus frais et les plus purs. Parmi les raisins, ils sont tartriques, maliques et citriques.\u00a0<strong>L\u2019acide tartrique<\/strong>est le principal acide du raisin et est le composant qui favorise une saveur croquante et un vieillissement gracieux dans le vin. Une acidit\u00e9 mod\u00e9r\u00e9e dans les vins provient de\u00a0<strong>l\u2019acide malique<\/strong>, ce qui contribue au fruit\u00e9. Une petite quantit\u00e9 provient de\u00a0<strong>l\u2019acide citrique<\/strong>. Le vin contient \u00e9galement des traces d\u2019autres acides. L\u2019acide le moins souhaitable dans le vin est l\u2019acide ac\u00e9tique qui, lorsqu\u2019il est pr\u00e9sent en plus d\u2019une quantit\u00e9 nominale, donne au vin un aspect aigre ou vinaigr\u00e9.<\/p>\n<p>Les consid\u00e9rations futures pourraient bien \u00eatre fa\u00e7onn\u00e9es en r\u00e9alisant que le tartre produit le go\u00fbt le plus\u00a0<em>vif<\/em>, malique le plus\u00a0<em>prononc\u00e9<\/em>, le plus\u00a0<em>frais<\/em>citrique, le plus\u00a0<em>faible<\/em>lactique, ac\u00e9tique le plus\u00a0<em>amer<\/em>et le plus\u00a0<em>odorant<\/em>, succinique le plus\u00a0<em>sal\u00e9<\/em>.<\/p>\n<p>L\u2019acidit\u00e9 totale des vins, \u00e9galement appel\u00e9e\u00a0<strong>acidit\u00e9 titrable<\/strong>, est la somme des acides fixes et volatils. L\u2019acidit\u00e9 totale affecte directement la couleur et la saveur du vin et, selon le style du vin, est recherch\u00e9e dans un \u00e9quilibre parfait avec la sensation douce et am\u00e8re des autres composants. Une bonne acidit\u00e9 des vins est ce qui les rend rafra\u00eechissants et un accompagnement id\u00e9al de la nourriture. Le niveau d\u2019acide appropri\u00e9 du vin varie, les vins plus doux n\u00e9cessitant g\u00e9n\u00e9ralement des niveaux un peu plus \u00e9lev\u00e9s pour conserver l\u2019\u00e9quilibre appropri\u00e9.<\/p>\n<p><strong><a title=\"ADVANCED WINEMAKING BASICS\" href=\"http:\/\/winemaking.jackkeller.net\/acid.asp\" target=\"_blank\" rel=\"noopener noreferrer\">Directives<\/a>\u00a0concernant les vins connus<\/strong><\/p>\n<p>Vins de raisin blancs secs 6,50 \u00e0 7,50 g \/ l<\/p>\n<p>Vins de raisin blancs doux 7,00 \u00e0 8,50 g \/ L<\/p>\n<p>Vins de raisins secs rouges de 6,00 \u00e0 7,00 g \/ L<\/p>\n<p>Vins de raisin rouge doux 6,50 \u00e0 8,00 g \/ L<\/p>\n<p>Vin de raisin x\u00e9r\u00e8s 5.00 \u00e0 6.00 g \/ L<\/p>\n<p>Vins Blancs Sans Raisin 5.50 \u00e0 6.50 g\/L<\/p>\n<p>Vins rouges sans raisin 5.50 \u00e0 6.00 g\/L<\/p>\n<p><strong>Deux mesures de l\u2019acidit\u00e9 \u2013 acidit\u00e9 titrable (TA) et potentiel de l\u2019hydrog\u00e8ne (pH)<\/strong><\/p>\n<p><strong>L\u2019acidit\u00e9 titrable<\/strong>\u00a0concerne la\u00a0<em>quantit\u00e9 d\u2019acide en solution<\/em>\u00a0exprim\u00e9e en pourcentage ou en grammes \/ litre (obtenue en multipliant le pourcentage de TA par 10). Par exemple, un TA de 0,80% devient 8 g \/ L. Le\u00a0<strong>pH<\/strong>\u00a0est li\u00e9 \u00e0 la\u00a0<em>force d<\/em>\u2019un acide en\u00a0<i>solution<\/i>\u00a0et est mesur\u00e9 sur une \u00e9chelle logarithmique.<\/p>\n<p>Bien que l\u2019AT et le pH soient li\u00e9s,\u00a0<strong>ils ne sont pas la m\u00eame chose<\/strong>.<\/p>\n<p>\u201cUne solution contenant une quantit\u00e9 sp\u00e9cifique d\u2019un acide relativement plus faible tel qu\u2019un malique aura un pH diff\u00e9rent (plus \u00e9lev\u00e9) qu\u2019une solution contenant la m\u00eame quantit\u00e9 d\u2019un acide plus fort tel que l\u2019acide tartrique\u201d<\/p>\n<p>Le pH d\u00e9termine les\u00a0<em>effets<\/em>\u00a0des acides sur le vin.
