bloqu\u00e9es portait sur les besoins nutritionnels des levures. Comme tout autre organisme vivant, la levure a des besoins nutritionnels pour une dur\u00e9e de vie saine et la r\u00e9alisation d\u2019activit\u00e9s m\u00e9taboliques r\u00e9guli\u00e8res tout en transformant vos pr\u00e9cieux raisins de Cabernet Sauvignon en vin de qualit\u00e9 sup\u00e9rieure. Le plus fondamental de ces param\u00e8tres est la quantit\u00e9 optimale de compos\u00e9s azot\u00e9s que la levure peut assimiler et m\u00e9taboliser pour des membranes saines, des structures cellulaires bien d\u00e9velopp\u00e9es et tous les m\u00e9canismes de d\u00e9fense n\u00e9cessaires pour g\u00e9rer le paysage microbiologique comp\u00e9titif.<\/p>\n<p>L\u2019un des r\u00e9sultats de ce travail est qu\u2019un certain nombre de fabricants de levure et de cave fournissent maintenant une gamme de suppl\u00e9ments nutritifs de levure pour r\u00e9pondre \u00e0 la gamme compl\u00e8te des besoins nutritionnels de la levure pour le processus de fermentation. Il s\u2019agit en fait d\u2019une combinaison de deux mesures distinctes \u2013 l\u2019ammoniac disponible dans le jus de raisin, ainsi que le complexe de compos\u00e9s alpha-amin\u00e9s appel\u00e9s FAN (<u>F<\/u>ree\u00a0<u>A<\/u>mino\u00a0<u>N<\/u>itrogen) que la levure absorbera et traitera pour leurs besoins nutritionnels. Les deux, mesur\u00e9s s\u00e9par\u00e9ment et combin\u00e9s, fournissent le profil nutritionnel global, ou YAN, de votre jus de raisin.<\/p>\n<p>Tout d\u2019abord, d\u00e9finissons une r\u00e9f\u00e9rence pour ce dont nous parlons dans l\u2019analyse en laboratoire. Les unit\u00e9s dont nous discutons vont atterrir au niveau ppm, ou concentration mg \/ L. Les exigences YAN des manuels pour la levure de vin saccharomyces commencent g\u00e9n\u00e9ralement \u00e0 environ 140-150 mg \/ L (Henscke). Le jus de raisin de cuve a une plage signal\u00e9e assez large, allant des faibles chiffres \u00e0 deux chiffres de 30 \u00e0 40 mg \/ L, \u00e0 des mesures assez importantes de plus de 1 000 mg \/ L. Les valeurs de YAN dans le jus peuvent cependant tendre vers ce qui est consid\u00e9r\u00e9 par les donn\u00e9es de recherche comme l\u00e9g\u00e8rement d\u00e9ficient sur le plan nutritionnel, autour de 100 \u00e0 150 mg \/ L. (citer Vintessential Labs et Butzke study AJEV 1998)<\/p>\n<h3>Compl\u00e9ter YAN dans votre jus de vin<\/h3>\n<p>L\u2019objectif du suivi du YAN dans le laboratoire du vin est de v\u00e9rifier la suffisance nutritionnelle de votre jus de base, puis d\u2019optimiser vos protocoles de suppl\u00e9mentation pour apporter les quantit\u00e9s id\u00e9ales \u00e0 la levure. Trop peu de YAN dans votre jus et vous risquez de coincer la fermentation \u00e0 cause de la famine nutritive. Un exc\u00e8s de YAN peut cependant aussi causer des probl\u00e8mes dans la cave; principalement la production de compos\u00e9s \u00e0 ar\u00f4me n\u00e9gatif, ou la possibilit\u00e9 de microbes d\u2019alt\u00e9ration ind\u00e9sirables et opportunistes ayant leurs besoins nutritionnels am\u00e9lior\u00e9s \u00e9galement.<\/p>\n<p>La plupart des fabricants de levures donneront les besoins nutritionnels de chaque souche qu\u2019ils proposent en tant que produit commercial. Des niveaux plus \u00e9lev\u00e9s de Brix entra\u00eenent des niveaux d\u2019alcool plus \u00e9lev\u00e9s, plus un stress osmotique plus important pour la levure avant le d\u00e9but de la enzymatique.<\/p>\n\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t<section class=\"elementor-section elementor-top-section elementor-element globale.<\/p>\n<p>Un spectrophotom\u00e8tre capable de lire l\u2019absorbance \u00e0 340 nm est le principal investissement pour l\u2019\u00e9quipement. Des co\u00fbts initiaux suppl\u00e9mentaires sont n\u00e9cessaires pour les micropipettes, les pointes de pipette et les cuvettes d\u2019\u00e9chantillonnage, dans lesquelles les co\u00fbts des pipettes peuvent \u00eatre importants par rapport aux co\u00fbts globaux des tests.
