Son r\u00f4le est de participer \u00e0 divers processus biochimiques, mais il faut faire attention \u00e0 l&rsquo;inhalation d&rsquo;oxyg\u00e8ne pur. Une exposition \u00e0 court terme n&rsquo;est pas nocive, mais il faut garder \u00e0 l&rsquo;esprit qu&rsquo;une inhalation prolong\u00e9e peut cr\u00e9er des probl\u00e8mes majeurs. Comme d&rsquo;autres \u00eatres vivants, la levure utilise l&rsquo;oxyg\u00e8ne pour maintenir les processus biochimiques. Si le brasseur d\u00e9cide d&rsquo;ajouter des st\u00e9rols et des acides gras insatur\u00e9s directement au mo\u00fbt, il n&rsquo;est pas n\u00e9cessaire d&rsquo;ajouter de l&rsquo;oxyg\u00e8ne. S&rsquo;il y a un manque de composants lipidiques, il y a des cons\u00e9quences ind\u00e9sirables telles qu&rsquo;un retard de fermentation, de mauvaises propri\u00e9t\u00e9s organoleptiques, une activit\u00e9 insuffisante et le nombre de cellules de levure. Il convient \u00e9galement de garder \u00e0 l&rsquo;esprit qu&rsquo;une concentration trop \u00e9lev\u00e9e en oxyg\u00e8ne entra\u00eenera des cons\u00e9quences ind\u00e9sirables telles qu&rsquo;une La concentration pr\u00e9f\u00e9r\u00e9e d&rsquo;oxyg\u00e8ne dissous dans le produit fini doit \u00eatre de <strong>0,0 \u00e0 0,5 ppm<\/strong>. L&rsquo;oxydation de la bi\u00e8re produit des compos\u00e9s qui alt\u00e8rent les propri\u00e9t\u00e9s organoleptiques de la bi\u00e8re et cr\u00e9e un produit qui n&rsquo;est pas souhaitable pour les utilisateurs finaux.
