Lorsque du SO<sub>2<\/sub> est ajout\u00e9 au vin, une partie de celui-ci devient imm\u00e9diatement li\u00e9e tandis qu&rsquo;une partie restante est du SO\u2082 non li\u00e9. La partie non li\u00e9e est \u00e9galement appel\u00e9e SO\u2082 libre ; il est responsable de la protection du vin.<\/p>\n\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-f7c23b3 elementor-widget elementor-widget-text-editor\" data-id=\"f7c23b3\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t\t\t\t\t\t<p>Le SO\u2082 li\u00e9 et le SO\u2082 libre sont appel\u00e9s SO\u2082 total. La relation entre la quantit\u00e9 de SO\u2082 ajout\u00e9e et la quantit\u00e9 de SO\u2082 libre est complexe. La quantit\u00e9 de SO\u2082 libre d\u00e9pend de la quantit\u00e9 ajout\u00e9e, de la quantit\u00e9 pr\u00e9sente avant l&rsquo;ajout et de la quantit\u00e9 imm\u00e9diatement li\u00e9e. Le SO\u2082 libre existe sous deux formes : le bisulfite (HSO\u2083\u00af) est la forme pr\u00e9dominante mais peu efficace et le SO\u2082 mol\u00e9culaire est la forme mineure et est responsable de la protection du vin. La quantit\u00e9 de SO\u2082 mol\u00e9culaire disponible dans le vin d\u00e9pend de la quantit\u00e9 de SO\u2082 libre pr\u00e9sent et du pH. Typiquement 0,8 ppm de SO\u2082 mol\u00e9culaire offre une protection ad\u00e9quate contre la croissance bact\u00e9rienne et l&rsquo;oxydation. Ce niveau est n\u00e9cessaire pour une protection maximale du vin. Des niveaux plus \u00e9lev\u00e9s sont n\u00e9cessaires pour les vins doux et surtout botrytis\u00e9s. Le HI931 peut \u00eatre utilis\u00e9 pour tester le SO\u2082 libre et total dans tous les vins, y compris le rouge, qui sont difficiles \u00e0 tester en utilisant des m\u00e9thodes traditionnelles associ\u00e9es \u00e0 un changement de couleur distinctif pour d\u00e9terminer le point final.<\/p>\n\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-692c9c6 elementor-widget elementor-widget-text-editor\" data-id=\"692c9c6\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t\t\t\t\t\t<p>La m\u00e9thode la plus utilis\u00e9e pour la d\u00e9termination du dioxyde de soufre libre et total (SO2) dans le vin est la m\u00e9thode Ripper.
