C&rsquo;est l&rsquo;acide fixe le plus important. Sa quantit\u00e9 contenue dans le raisin diminue lorsque l&rsquo;\u00e9t\u00e9 est chaud. Il est parfois n\u00e9cessaire de l&rsquo;ajouter au mo\u00fbt lorsqu&rsquo;il souffre d&rsquo;un manque d&rsquo;acidit\u00e9 et que le vin risque d&rsquo;\u00eatre mou et insuffisamment charpent\u00e9. La l\u00e9gislation europ\u00e9enne autorise l&rsquo;utilisation de cet acide \u00e0 des doses maximales de 1,5 g\/L pour les mo\u00fbts et de 2,5 g\/L pour les vins. A l&rsquo;inverse, une proportion trop \u00e9lev\u00e9e de cet acide donne un vin astringent et \u00e2pre et peut favoriser la formation de pr\u00e9cipitations tartriques. Les sels de l&rsquo;acide tartrique sont peu solubles. En raison de la teneur en ions tartrate, potassium et calcium du vin, le bitartrate de potassium et le tartrate de calcium ont naturellement tendance \u00e0 pr\u00e9cipiter. Le d\u00e9veloppement de la cristallisation d\u00e9pend de divers facteurs dont la temp\u00e9rature, le pH, la teneur en \u00e9thanol. Dans le vin, une concentration en acide tartrique sup\u00e9rieure \u00e0 4 g\/L peut entra\u00eener l&rsquo;apparition d&rsquo;un d\u00e9p\u00f4t de Acide essentiel du vin, l&rsquo;acide tartrique est en \u00e9quilibre avec deux sels : l&rsquo;hydrog\u00e9notartrate de potassium et le tartrate neutre de calcium, dont la solubilit\u00e9 est limit\u00e9e. Une premi\u00e8re pr\u00e9cipitation tartrique se produit lors de la fermentation alcoolique, li\u00e9e \u00e0 l&rsquo;augmentation de la teneur en alcool du mo\u00fbt. S&rsquo;il est \u00e9limin\u00e9 par la manipulation du vin, d&rsquo;autres pr\u00e9cipitations peuvent se produire dans les bouteilles. Pour les vins effervescents, \u00e0 l&rsquo;ouverture de la bouteille, l&#8217;empilement (et parfois la perte de liquide occasionn\u00e9e) est \u00e0 \u00e9viter et fait chuter dramatiquement l&rsquo;image du produit.
