Des contr\u00f4les organoleptiques et chimiques doivent \u00eatre effectu\u00e9s r\u00e9guli\u00e8rement afin d&rsquo;atteindre une qualit\u00e9 optimale du vin lors de son \u00e9levage en barriques ou en bouteilles. Au cours de la maturation, de nombreux processus se produisent dans le vin : oxydation et r\u00e9duction, diminution de l&rsquo;acidit\u00e9 du vin, formation de cr\u00e8me de tartre et d\u00e9gradation biologique des acides. Pour \u00e9viter la formation de formes chimiques ind\u00e9sirables, du dioxyde de soufre est ajout\u00e9 au vin. Le dioxyde de soufre agit comme agent de r\u00e9duction, de stabilisation et de conservation. Il a un effet positif sur la formation du bouquet, il prot\u00e8ge les substances oxydables du vin contre l&rsquo;oxydation, pr\u00e9vient la perte des composants aromatiques et de la couleur du vin. Le SO2 a la capacit\u00e9 de lier l&rsquo;oxyg\u00e8ne et de prot\u00e9ger le vin contre l&rsquo;oxydation enzymatique ou non enzymatique. Le dioxyde de soufre peut subir des modifications pendant le stockage du vin. Apr\u00e8s 30 minutes, 16 % de H2SO4 (10 ml), une solution de Na2EDTA (1 ml) et une solution d&rsquo;amidon (5 ml) ont \u00e9t\u00e9 ajout\u00e9s \u00e0 l&rsquo;aide d&rsquo;un cylindre gradu\u00e9. La solution d&rsquo;\u00e9chantillon a \u00e9t\u00e9 titr\u00e9e rapidement avec une solution volum\u00e9trique d&rsquo;I2 [c (I2) = 0,01 mol\/l] jusqu&rsquo;\u00e0 ce qu&rsquo;une couleur bleue persistant pendant 30 s soit observ\u00e9e sur le fond blanc. La quantit\u00e9 de solution \u00e9talon d&rsquo;I2 consomm\u00e9e lors du titrage des r\u00e9ductones doit \u00eatre d\u00e9duite du calcul de la molarit\u00e9 du SO2 libre ou total dans le vin. La teneur en r\u00e9ductone a \u00e9t\u00e9 exprim\u00e9e en mg\/l d&rsquo;acide ascorbique, ou en mg\/l de dioxyde de soufre \u00e0 des fins de comparaison avec les niveaux de dioxyde de soufre
