La pr\u00e9paration de la cr\u00e8me p\u00e2tissi\u00e8re doit \u00eatre d\u00e9licate, car une augmentation de temp\u00e9rature de 3 \u00e0 6 \u00b0C entra\u00eene une surcuisson et un caillage. En r\u00e8gle g\u00e9n\u00e9rale, une cr\u00e8me anglaise enti\u00e8rement cuite ne doit pas d\u00e9passer 80 \u00b0 C; il commence \u00e0 prendre \u00e0 70 \u00b0C. Un bain-marie ralentit le transfert de chaleur et facilite le retrait de la cr\u00e8me p\u00e2tissi\u00e8re du four avant qu&rsquo;elle ne caille.
