m\u00e9lang\u00e9s pour obtenir la p\u00e2te ; apr\u00e8s cela, l<strong>a fermentation de la p\u00e2te<\/strong> suit: l&rsquo;op\u00e9ration de division en plus petits morceaux, la mise en forme des p\u00e2tons sous la forme de produit final souhait\u00e9e et l&rsquo;\u00e9tape finale de fermentation.<\/p>\n<p>Pour une <strong>panification plus traditionnelle<\/strong>, apr\u00e8s p\u00e9trissage, la p\u00e2te doit \u00eatre ferment\u00e9e pendant un certain temps (selon le type de technologie) avant le traitement final. Le levain peut avoir <strong>quatre classifications<\/strong> selon le type de fermentation et le proc\u00e9d\u00e9 technologique utilis\u00e9. Avec la croissance des LAB pendant la fermentation, <strong>le pH diminue<\/strong> avec l&rsquo;hydrolyse ult\u00e9rieure de l&rsquo;amidon et des prot\u00e9ines, favorisant la croissance des levures. La temp\u00e9rature affecte <strong>la vitesse de fermentation<\/strong> et <strong>la composition microbienne<\/strong> du levain.<\/p>\n<p><strong>Le levain de<\/strong> type I est g\u00e9n\u00e9ralement produit \u00e0 partir d&rsquo;une p\u00e2te ferme et d&rsquo;une m\u00e9thode traditionnelle, caract\u00e9ris\u00e9e par une fermentation spontan\u00e9e, initi\u00e9e par les souches microbiennes d\u00e9j\u00e0 pr\u00e9sentes dans la premi\u00e8re p\u00e2te et r\u00e9alis\u00e9e \u00e0 temp\u00e9rature ambiante (20-30 \u00b0C).<\/p>\n<p>En raison de l&rsquo;ajout des ferments lactiques, le processus de fermentation utilis\u00e9 avec le levain de <strong>type II<\/strong> est effectu\u00e9 \u00e0 des temp\u00e9ratures plus \u00e9lev\u00e9es, sup\u00e9rieures \u00e0 30 \u00b0C ; cela permet une acidification rapide et \u00e9lev\u00e9e qui peut inhiber la croissance de la levure naturelle.<\/p>\n\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t<div
