Ils affectent les propri\u00e9t\u00e9s sensorielles du vin et sont des indicateurs de la (in)stabilit\u00e9 biologique du vin.<\/p>\n\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-3cd958a elementor-widget elementor-widget-text-editor\" data-id=\"3cd958a\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t\t\t\t\t\t<p>Sous certaines conditions (comme le chauffage), il s&rsquo;\u00e9vapore du vin. g\/L.<\/p>\n<h4><strong>Selon l&rsquo;Ordonnance sur le vin, le maximum est autoris\u00e9 [3] :<\/strong><\/h4>\n<ul>\n<li>blanc, rose, cerise noire avec une teneur jusqu&rsquo;\u00e0 10% vol d&rsquo;alcool : 1,1 g\/L d&rsquo;acide ac\u00e9tique<\/li>\n<li>vin avec appellation d&rsquo;origine contr\u00f4l\u00e9e : 1 g\/L d&rsquo;acide ac\u00e9tique<\/li>\n<li>vin titrant plus de 10% vol d&rsquo;alcool : pour chaque vol. % d&rsquo;alcool est autoris\u00e9 un autre + 0,06 g \/ L d&rsquo;acide ac\u00e9tique<\/li>\n<\/ul>\n<p>Autres acides volatils du vin : acide propionique, acide d&rsquo;abord \u00e9t\u00e9 \u00e9limin\u00e9 par oxydation avec du peroxyde d&rsquo;hydrog\u00e8ne.<\/p>\n<p>Le distillat est titr\u00e9 avec de l&rsquo;hydroxyde de sodium jusqu&rsquo;au point final pH 8,20 indiqu\u00e9 avec une \u00e9lectrode de pH et l&rsquo;acidit\u00e9 calcul\u00e9e et exprim\u00e9e en \u00e9quivalents d&rsquo;acide
