Ne otapaju se u vodi, ve\u0107 se otapaju u organskim otapalima.<\/p>\n<p><b>Masti\u00a0<\/b>su spojevi s\u00a0<b>zasi\u0107enim masnim kiselinama<\/b>\u00a0(palmitinska, stearinska), te su stoga na sobnoj temperaturi u krutom ili polukrutom stanju, a\u00a0<b>ulja<\/b>\u00a0su spojevi s\u00a0<b>nezasi\u0107enim masnim kiselinama<\/b>\u00a0(MUFA, PUFA) i stoga su na sobnoj temperaturi u teku\u0107em stanju. Mo\u017ee se dogoditi u ulju ako se voda ne odvaja, ali to se rijetko doga\u0111a u modernim uljarama. Ovaj\u00a0<b>stupanj hidroliti\u010dkog kvarenja<\/b>\u00a0(\u010desto poznat kao hidroliti\u010dka u\u017eeglost) odre\u0111uje se odre\u0111ivanjem<b>\u00a0slobodnih masnih kiselina<\/b>\u00a0(% FFA). Sadr\u017eaj slobodnih masnih kiselina tako\u0111er se odre\u0111uje kao\u00a0<b>kiselost\u00a0<\/b>ulja, kiselinski broj ili stupanj kiseline.
