Potrebno je nekoliko koraka kako bi se gro\u017e\u0111e s vinove loze pretvorilo u kristalno bistra vina koja se nalaze na policama.<\/p>\n<p>Prije otpreme na lokalno tr\u017ei\u0161te vino se obra\u0111uje sredstvima za rafiniranje, jer je nerafinirano vino prili\u010dno mutno i maglovito. Zamu\u0107enost nastaje zbog suspendiranih krutih tvari dobivenih tijekom fermentacije. Ovakva zamagljenost je ono \u0161to vinari nazivaju proteinima, ili ukratko mutno\u0107om. Proteini sli\u010dni taumatinu (TLP) i hitinaze su primarni proteini gro\u017e\u0111a koji su odgovorni za stvaranje izmaglice. Ti se pozitivno nabijeni proteini degeneriraju i lijepe zajedno, \u0161to rezultira nepo\u017eeljnim flokulentnim oblacima i vidljivom zamagljeno\u0161\u0107u.
