Njegova je uloga sudjelovati u raznim biokemijskim procesima, ali je potrebno paziti na udisanje \u010distog kisika. Kratkotrajno izlaganje nije \u0161tetno, ali treba imati na umu da dugotrajno udisanje mo\u017ee stvoriti velike probleme. Kao i druga \u017eiva bi\u0107a, kvasac koristi kisik za odr\u017eavanje biokemijskih procesa. Ako pivovar odlu\u010di sterole i nezasi\u0107ene masne kiseline dodati izravno u sladovinu, nema potrebe za dodavanjem kisika. Ako postoji nedostatak lipidnih komponenti, dolazi do ne\u017eeljenih posljedica kao \u0161to su odgo\u0111ena fermentacija, lo\u0161a organolepti\u010dka svojstva, nedovoljna aktivnost i broj stanica kvasca. Tako\u0111er treba imati na umu da \u0107e previsoka koncentracija kisika dovesti do ne\u017eeljenih posljedica kao \u0161to su prebrza fermentacija, nepovoljan rast kvasca i ve\u0107i udio Potrebe za kisikom variraju od soja do soja kvasca koji se koristi u proizvodnji, kao i od vrste piva. Pivo stari prirodno, \u010dak i ako je mikrobiolo\u0161ki ispravno. Jedan od glavnih uzroka starenja piva je oksidacija. Ako se koli\u010dina kisika smanji, trajanje piva se produljuje. Po\u017eeljna koncentracija otopljenog kisika u gotovom proizvodu trebala bi biti <strong>0,0-0,5 ppm<\/strong>. Oksidacijom piva nastaju spojevi koji naru\u0161avaju organolepti\u010dka svojstva piva i stvaraju proizvod koji krajnjim korisnicima nije po\u017eeljan. Zbog toga je potrebno mjeriti i kontrolirati kisik u kona\u010dnom proizvodu.<\/p>\n\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t<div class=\"elementor-column elementor-col-50
