Kada se SO<sub>2<\/sub> doda vinu, jedan dio postaje odmah vezan, dok je preostali dio nevezani SO\u2082. Dio koji je nevezan naziva se i slobodni SO\u2082; upravo on je odgovoran za za\u0161titu vina.<\/p>\n\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-f7c23b3 elementor-widget elementor-widget-text-editor\" data-id=\"f7c23b3\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t\t\t\t\t\t<p>Vezani i slobodni SO\u2082 zajedno se nazivaju ukupnim SO\u2082. Odnos izme\u0111u koli\u010dine dodanog SO\u2082 i koli\u010dine slobodnog SO\u2082 je slo\u017een. Koli\u010dina slobodnog SO\u2082 ovisi o tome koliko je dodano, koliko je bilo prisutno prije dodavanja i koliko je odmah vezano. Slobodni SO\u2082 postoji u dva oblika: bisulfit (HSO\u2083\u00af) je prevladavaju\u0107i oblik, ali je relativno neu\u010dinkovit, a molekularni SO\u2082 je manji oblik i odgovoran je za za\u0161titu vina. Koli\u010dina molekularnog SO\u2082 dostupnog u vinu ovisi o koli\u010dini prisutnog slobodnog SO\u2082 i pH. Obi\u010dno 0,8 ppm molekularnog SO\u2082 pru\u017ea odgovaraju\u0107u za\u0161titu od rasta i oksidacije bakterija. Ova razina je potrebna za maksimalnu za\u0161titu vina. Vi\u0161e razine potrebne su za slatko i najistaknutije, botritizirano vino. HI931 se mo\u017ee koristiti za testiranje slobodnog i ukupnog SO\u2082 u svim vinima, uklju\u010duju\u0107i crveno, koje je te\u0161ko testirati tradicionalnim metodama povezanim s razlikovnom promjenom boje za odre\u0111ivanje krajnje to\u010dke.<\/p>\n\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-692c9c6 elementor-widget elementor-widget-text-editor\" data-id=\"692c9c6\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t\t\t\t\t\t<p>Najvi\u0161e kori\u0161tena metoda za odre\u0111ivanje slobodnog i ukupnog sumporovog dioksida (SO2) u vinu je Ripper metoda.
