industrijsku proizvodnju kruha.<\/p>\n<p><strong>Bra\u0161no<\/strong>, <strong>voda<\/strong> i <strong>kvasac<\/strong> ili neki drugi sastojci se mije\u0161aju da se dobije tijesto; nakon toga slijedi <strong>fermentacija tijesta<\/strong>: operacija dijeljenja na manje komade, oblikovanje komada tijesta u \u017eeljeni oblik kona\u010dnog proizvoda i zavr\u0161no dizanje.<\/p>\n<p>Za <strong>tradicionalniju pripremu kruha<\/strong>, nakon mije\u0161anja, tijesto mora fermentirati odre\u0111eno vrijeme (ovisno o vrsti tehnologije) prije kona\u010dne obrade. Kiselo tijesto mo\u017ee imati <strong>\u010detiri klasifikacije<\/strong> prema vrsti fermentacije i kori\u0161tenom tehnolo\u0161kom procesu. Uz rast LAB-a tijekom fermentacije, <strong>pH se smanjuje<\/strong> s naknadnom hidrolizom \u0161kroba i proteina, pogoduju\u0107i rastu kvasaca. Temperatura utje\u010de na <strong>brzinu fermentacije<\/strong> i <strong>mikrobni sastav<\/strong> kiselog tijesta.<\/p>\n<p><strong>Kiselo tijesto tipa I<\/strong> obi\u010dno se proizvodi s \u010dvrstim tijestom i tradicionalnom metodom koju karakterizira spontana fermentacija, koju pokre\u0107u mikrobni sojevi koji su ve\u0107 prisutni u prvom tijestu i provodi se na sobnoj temperaturi (20\u201330 \u00b0C).<\/p>\n<p>Zbog dodavanja starter kultura, proces fermentacije koji se koristi s kiselim tijestom <strong>tipa II<\/strong> provodi se na vi\u0161im temperaturama, iznad 30 \u00b0C; ovo omogu\u0107uje brzo i visoko zakiseljavanje koje mo\u017ee sprije\u010diti rast prirodnog kvasca.<\/p>\n\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t<div
