Tokom fermentacije, kvasac c\u0301e proizvesti male koli\u010dine sirc\u0301etne kiseline. Ako je vino izlo\u017eeno kiseoniku, bakterije c\u0301e po\u010deti da metaboli\u0161u etanol u sirc\u0301etnu kiselinu. To c\u0301e dovesti do acetifikacije vina i njegove degradacije u sirc\u0301e. Mo\u017ee se formirati u vinu i tokom biorazgradnje limunske kiseline. Ukus vina c\u0301e biti kiselkast i neuobi\u010dajen. Da bi se to spre\u010dilo, u rezervoaru za vino ne treba ostavljati vazduh tokom fermentacije. Prati se tokom procesa, tako\u0111e poznat kao isparljiva kiselina (VA). Zdravo vino sadr\u017ei 0,3-0,6 g\/l, re\u0111e do 1 g\/l, dok pokvareno vino 1,1 g\/l<\/p>\n<p><strong>Acetaldehid<\/strong><\/p>\n<p>Acetaldehid uglavnom proizvode kvasac i bakterije tokom fermentacije, ali to nije jedini na\u010din. Acetaldehid je me\u0111uproizvod tokom bakteriolo\u0161ke konverzije etanola u sirc\u0301etnu kiselinu od strane bakterija. Kada su koncentracije alkohola niske i veoma izlo\u017eene kiseoniku, formiraju se zna\u010dajne koncentracije sirc\u0301etne kiseline. Kada su koncentracije alkohola visoke i postoji ograni\u010dena izlo\u017eenost kiseoniku, bakterije imaju tendenciju da proizvode vi\u0161e acetaldehida. Va\u017ean je za ukus, nepo\u017eeljan u vec\u0301im koncentracijama jer daje ukus odle\u017eanom, oksidovanom i gaziranom vinu.<\/p>\n<p><strong>Amonijak<\/strong><\/p>\n<p>Azotna jedinjenja kao \u0161to je amonijak su neophodna za proces proizvodnje vina. U soku od gro\u017e\u0111a mora biti prisutna dovoljna koncentracija azota za zdrav metabolizam kvasca i efikasnu fermentaciju. Nizak nivo azota mo\u017ee dovesti do spore ili nepotpune fermentacije. Ukupni azot (prisutan u obliku amonijaka i aminokiselina) se obi\u010dno meri u \u0161iru pre fermentacije da bi se obezbedila adekvatna koncentracija dostupnog azota kvasca (IAN) za efikasnu fermentaciju. Svaki amonijak koji kvasac ne potro\u0161i tokom fermentacije ostaje u gotovom vinu. Amonijak u vinu mo\u017ee uticati na ukus i mikrobnu stabilnost u gotovom proizvodu. Tipi\u010dne koncentracije amonijaka u gotovom vinu krec\u0301u se izme\u0111u 3-50 mg\/L.<\/p>\n<p><strong>L-arginin\/urea\/amonijak<\/strong><\/p>\n<p>Ako govorimo o odre\u0111ivanju IAN-a (L-arginin, urea i amonijak), to je pokazatelj koli\u010dine raspolo\u017eivog azota za rast kvasca. IAN ima tri komponente: slobodne amonijum jone, amino azot iz slobodnih amino kiselina i iz bo\u010dnog lanca L-arginina. Koncentracije ovih jedinjenja mogu da variraju u velikoj meri i IAN se mo\u017ee kontrolisati dodavanjem hranljivih suplemenata u mo\u0161t pre ili tokom fermentacije. Tokom malolakti\u010dke fermentacije, bakterije mle\u010dne kiseline mogu razgraditi arginin, \u0161to c\u0301e dovesti do stvaranja amonijaka i citrulina. Amonijak povec\u0301ava pH i to mo\u017ee dovesti do rizika od bakterija koje kvare rast, dok je citrulin prekursor kancerogenog etil karbamata.<\/p>\n<p><strong>Askorbinska kiselina<\/strong><\/p>\n<p>Askorbinska kiselina je prirodno prisutna u gro\u017e\u0111u, ali u malim koncentracijama i uglavnom se gubi tokom procesa zrenja. Primena askorbinske kiseline u vinarstvu je u tehnolo\u0161kim postupcima za\u0161tite od aeracije. Uglavnom se koristi za uklanjanje molekularnog kiseonika i spre\u010davanje po\u010detka oksidativnog kvarenja (sme\u0111ivanja) belih vina. Askorbinska kiselina je odli\u010dan antioksidans i dobro se koristi sa sumpor dioksidom. EU ima ograni\u010denje od 150 mg\/L.<\/p>\n<p><strong>Limunska kiselina<\/strong><\/p>\n<p>Samo oko 5 procenata ukupne kiseline \u010dini limunska kiselina u gro\u017e\u0111u. Vinski mikroorganizmi lako metaboli\u0161u limunsku kiselinu u druge molekule. Neke bakterije ga mogu metabolisati u mle\u010dnu kiselinu i sirc\u0301etnu kiselinu. Visoka koncentracija limunske kiseline nikada nije po\u017eeljna u vinu. Nekada se limunska kiselina obi\u010dno koristila tokom fermentacije da bi se povec\u0301ala kiselost vina, posebno za vina koja su slatka i rastu u toplijim klimama. Danas se uglavnom koristi kao stabilizator za spre\u010davanje zamagljivanja gvo\u017e\u0111a. Unutar EU limunska kiselina se mo\u017ee koristiti samo u svrhu stabilizacije i kona\u010dni sadr\u017eaj limunske kiseline ne bi trebalo da prelazi 1 g\/L.<\/p>\n<p><strong>Etanol<\/strong><\/p>\n<p>Etanol je jedini alkohol koji se koristi u ljudskoj upotrebi. Tokom fermentacije iz glukoze se stvara etanol. Ogromna vec\u0301ina vina ima nivo alkohola izme\u0111u 12 i 15%. Koli\u010dine preko 17,5% ukazuju na njegovo dodavanje. Enzimsko odre\u0111ivanje koncentracije alkohola je prili\u010dno jednostavno Etanol u prisustvu enzima alkohol dehidrogenaze i redukcije NAD + u NADH se pretvara u acetaldehid koji se dalje mo\u017ee metabolisati u sirc\u0301etnu kiselinu.<\/p>\n<p><strong>D-Glukoza\/D-Fruktoza<\/strong><\/p>\n<p>Prirodno se nalaze u gro\u017e\u0111u i fermentiraju u alkohol. Za ogromnu vec\u0301inu merenja tokom procesa proizvodnje vina nije potrebno praviti razliku izme\u0111u D-glukoze i D-fruktoze.<\/p>\n<p><strong>D-mle\u010dna kiselina<\/strong><\/p>\n<p>U industriji vina, proizvodnja D-mle\u010dne kiseline mo\u017ee ukazivati na kvarenje vina bakterijama mle\u010dne kiseline. Ovo c\u0301e promeniti ukus vina i nepo\u017eeljno je u vinu. L-mle\u010dna kiselina se stvara tokom malolakti\u010dke fermentacije smanjenjem L-jabu\u010dne kiseline. Ova hemijska reakcija je tra\u017eena u nekoj vrsti vina.<\/p>\n<p><strong>D-jabu\u010dna kiselina<\/strong><\/p>\n<p>Otkrivanje D-jabu\u010dne kiseline u sokovima ili vinu ukazuje na to da je dodata. Pravna situacija u vezi sa dodatkom D-\/L-jabu\u010dne kiseline u sokove ili vino razlikuje se od zemlje do zemlje. To doprinosi ukusu vina. L-jabu\u010dna kiselina je prirodno prisutna u vinu i reaktant je malolakti\u010dke fermentacije.<\/p>\n<p><strong>Manitol<\/strong><\/p>\n<p>Manitol je poliol, poznat kao \u0161ec\u0301erni alkohol. U vinu ga proizvode bakterije mle\u010dne kiseline, redukcijom fruktoze. Visoke koncentracije su nepo\u017eeljne jer daje vinu sirc\u0301etno-esterski, blago sladak ukus. Obi\u010dno se proizvodi u vinu ako se malolakti\u010dka fermentacija odvija u prisustvu visokog nivoa zaostalih \u0161ec\u0301era.<\/p>\n<p><strong>Slobodni &amp; Ukupni Sulfiti<\/strong><\/p>\n<p>SO2 se \u0161iroko koristi kao aditiv u vinu. Obi\u010dno se dodaju u postmalolakti\u010dkoj fermentaciji, u kontroli kontaminacije i tokom starenja. Tako\u0111e \u0161titi vino od \u0161tetnog \u201eoksidativnog i enzimskog tamnjenja\u201c. \u201eBesplatan\u201c, nevezani oblik SO2 je aktivan samo kao antimikrobni i antioksidativni konzervans. Neki ljudi imaju intoleranciju na sulfite (nalaze se na listi naj\u010de\u0161c\u0301ih alergena), pa je neophodno ta\u010dno odre\u0111ivanje nivoa sulfita u vinima i drugim namirnicama.<\/p>\n<p><strong>Vinska kiselina<\/strong><\/p>\n<p> Vinska kiselina je prirodno prisutna u gro\u017e\u0111u i jedna je od najzastupljenijih organskih kiselina u vinu. Ova kiselina najvi\u0161e doprinosi ukupnoj (titrabilnoj) kiselosti vina. Op\u0161ti nivoi ukupne kiselosti u vinima krec\u0301u se od pribli\u017eno 0,4 do 1,0% (v\/v). Ako je ukupna kiselost vina previsoka, mo\u017ee se dodati vinska kiselina da se smanji pH nivo.
