Njegova uloga je da u\u010destvuje u raznim biohemijskim procesima, ali je neophodno obratiti pa\u017enju na udisanje \u010distog kiseonika. Kratkotrajno izlaganje nije \u0161tetno, ali treba imati na umu da produ\u017eeno udisanje mo\u017ee stvoriti velike probleme. Kao i druga \u017eiva bic\u0301a, kvasac koristi kiseonik za odr\u017eavanje biohemijskih procesa. Ako proizvo\u0111a\u010d piva odlu\u010di da sterole i nezasic\u0301ene masne kiseline doda direktno u sladovinu, nema potrebe za dodavanjem kiseonika. Ako postoji nedostatak lipidnih komponenti, dolazi do ne\u017eeljenih posledica kao \u0161to su odlo\u017eena fermentacija, lo\u0161a organolepti\u010dka svojstva, nedovoljna aktivnost i broj c\u0301elija kvasca. Tako\u0111e treba imati na umu da c\u0301e previsoka koncentracija kiseonika dovesti do ne\u017eeljenih posledica kao \u0161to su prebrza fermentacija, nepovoljan rast kvasca i vec\u0301i sadr\u017eaj Potrebe za kiseonikom variraju od soja do soja kvasca koji se koristi u proizvodnji, kao i od vrste piva. Pivo stari prirodno, \u010dak i ako je mikrobiolo\u0161ki ispravno. Jedan od glavnih uzroka starenja piva je oksidacija. Ako se koli\u010dina kiseonika smanji, trajanje piva se produ\u017eava. Po\u017eeljna koncentracija rastvorenog kiseonika u gotovom proizvodu treba da bude <strong>0.0-0.5 ppm<\/strong>. Oksidacijom piva nastaju jedinjenja koja naru\u0161avaju organolepti\u010dka svojstva piva i stvaraju proizvod koji nije po\u017eeljan za krajnje korisnike. Iz tog razloga je neophodno meriti i kontrolisati kiseonik u finalnom proizvodu.<\/p>\n\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t<div class=\"elementor-column elementor-col-50
