Organolepti\u010dki i hemijski nadzor treba redovno sprovoditi kako bi se postigao optimalan kvalitet vina tokom sazrevanja u buradima ili fla\u0161ama. U procesu sazrevanja u vinu se de\u0161avaju mnogi procesi: oksidacija i redukcija, smanjenje kiselosti vina, stvaranje kreme od kamenca i biolo\u0161ka degradacija kiselina. Da bi se spre\u010dilo stvaranje ne\u017eeljenih hemijskih oblika, u vino se dodaje sumpor dioksid. Sumpor dioksid deluje kao sredstvo za redukciju, stabilizaciju i konzervaciju. Pozitivno uti\u010de na aromu, \u0161titi oksidirajuc\u0301e materije u vinu od oksidacije, spre\u010dava gubitak aromati\u010dnih komponenti i boje vina. SO2 ima sposobnost da vezuje kiseonik i \u0161titi vino od enzimske ili neenzimske oksidacije. Sumpor dioksid se mo\u017ee promeniti tokom skladi\u0161tenja vina. Boca je zatvorena i njen sadr\u017eaj je pome\u0161an. Posle 30 min, 16% H2SO4 (10 ml), rastvor Na2EDTA (1 ml) i rastvor skroba (5 ml) su dodani kori\u0161c\u0301enjem cilindra. Rastvor uzorka je brzo titriran volumetrijskim rastvorom I2 [c (I2) = 0,01 mol\/l] sve dok na beloj pozadini nije primec\u0301ena plava boja koja je trajala 30 s. Koli\u010dinu standardnog rastvora I2 utro\u0161enog u titraciji reduktona treba oduzeti u prora\u010dunu molarnosti slobodnog ili ukupnog SO2 u vinu. Sadr\u017eaj reduktona je izra\u017een kao mg\/l askorbinske kiseline, ili kao mg\/l sumpor-dioksida u cilju pore\u0111enja sa nivoima sumpor-dioksida utvr\u0111enim komercijalno dostupnim
