How to grill a perfect burger?

Grilling season is finally here again! You can grill pretty much everything and it’s all delicious when cooked on the grill. One of the most often grilled food are burgers. Whether you are a passionate burger master in your own backyard or part of the HoReCa sector and you prepare burgers for a large mass of people you should be aware of several thing.

Trying to know when your burger is done in the way you like best, just by looking at it, can be pretty difficult. Many mistakes can be done in this process and it can leave you hungry or dissatisfied.
But, this process is much easier then you think and it will always leave you with the burger that you love the most.
The secret of perfect burger is in temperature.
Different temperatures are associated with each level of doneness, as well as the approximate timing for each.

Rare burger has an internal temperature of 52°C-55°C and is completely pink throughout the burger

Medium Rare has an internal temperature of 55°C-60°C and is just slight brown inside near the crust of the burger.

Medium has an internal temperature of 60°C-66°C and a center that is slightly pink while the rest of the meat is brown.

Medium Well has an internal temperature of 66°C-68°C and most of the meat is brown.

Well done has an internal temperature of 68°C or up and the meat is completely brown throughout the inside.

The USDA recommends cooking ground beef to an internal temperature of 68°C or more to ensure you’ve killed harmful bacteria.
