When selecting your roast, plan for approximately 200-250 g per person. Choose a piece of meat that you want to prepare, season it and leave it in the fridge overnight so that all the flavors penetrate better into the meat. Before you start baking your roast, you need to heat the oven to a specific temperature (around 220°C).
Depending on the type of meat, each meat will be cooked at a specific temperature for a specific time.
Cooking your roast to your desired doneness is best measured with a meat thermometer. Make sure to monitor your roast during the cooking process and use these temperature guidelines for doneness.

Reduce oven temperature to 170-180°C. Roast until meat thermometer inserted into center of beef registers 55-60° C for medium rare, about 40 minutes. Remove and transfer roast to platter. Let rest for 15 minutes and serve.
