Food production is strategically interesting in every country. According to the Food Act, entities in the food business that produce, process or distribute food end users are obliged to establish, implement and maintain a food safety system based on HACCP principles.
All subjects in the “farm-to-table” food business that produce, process, prepare or distribute food or animal feed are responsible for implementing and controlling the effectiveness of implementing food hygiene measures in all stages of the production process, processing and distribution that are under their responsibility.


Entities in the food business in the entire food chain are responsible for conducting continuous monitoring of:
- respecting microbiological criteria for food;
- procedures necessary to achieve the goals of a higher level of health protection
- by complying with the requirements on temperature monitoring for food;
- maintaining the cold chain;
- sampling and analysis.
HACCP IN FOOD TRADE
In implementing the recommendations from the Good Hygiene Practice Guide for FOOD TRADE as well as in the establishment of a food safety system in subjects, two are possible for subjects options:
1. Establishment of good hygiene practices based on already established prerequisites, and establishing, implementing and controlling the implementation of self-control plans, including temperature control and cold chain maintenance.

Subjects operating with food must have appropriate equipment and/or solutions for maintenance imonitoring temperature conditions suitable for food.

Correct use of a prick thermometer
A thermometer is used to check the temperature of food:
- when delivering food
- during thermal processing of food
- when keeping food warm
- when cooling food after heat treatment
- when controlling the temperature of the cold table/counter.

The piercing thermometer should be kept clean, i.e. it should be disinfected thermometer probe before and after use or temperature measurement. Before use as well as after each use, it should be washed and disinfected to prevent food contamination occurred.
Use the infrared thermometer according to the manufacturer’s instructions and for the purpose of measuring the surface temperatures of deep-frozen and/or packaged food (packages), work surfaces and similar..
